First the spicy hogget strips (ginger and garlic, cumin, corriander) and the slivers of beetroot and fennel meet the pan; then the flat leaf parsley and spinach, to wilt.

Then they join the cucumber, fetta, lettuce, olives and lemon juice in the bowl.
